Subject speciality

 

HRI 120 - Principles of Food Preparation
Applies scientific principles and techniques to the preparation of food, including carbohydrates, such as fruits, vegetables, sugars and starches; fats, including animal and vegetable, as well as natural and manufactured; and proteins, such as milk, cheese, eggs, legumes, fish and shellfish. Lecture 3 hours. Laboratory 3 hours. Total 6 hours per week.

DIT 121 I (Hybrid)
Studies food composition, dietary guidelines, and nutrients essential to healthy human life. Analyzes nutrient function and metabolism. Hybrid format: 50% online, 50% face to face.

DIT 125 Current Concepts & Controversies in Nutrition
Studies the importance of diet to health and well-being in daily life. Addresses current controversies over food practices and information, food facts and fiction, fad diets, vegetarianism, diet and heart disease, and sound guidelines for maintaining good health with wise food choices. Applies computer technology for nutritional analysis. Intended especially for the non-dietetic major. Lecture 3 hours per week.

DIT 221 Therapeutic Nutrition
Prerequisites are DIT 121, 122, or approval of instructor. Applies nutrition principles to the treatment of persons with special dietary needs. Lecture 4 hours per week.

Professional Biography

 

Janet Sass has been a faculty member of Northern Virginia Community College since August 1986. Prior to her arrival at NOVA, she was Director of Nutrition Services at Caro Regional Mental Health Center- Saginaw, MI, graduate instructor at Purdue University in the Hospitality and Tourism program, and Food Service Director at Southern Maryland Hospital in Clinton, MD.    Janet is a registered dietitian and certified food manager. Her special interests include the “slow food” movement and improving the nutrient quality of the diet with good tasting foods. 

A Founding member of the American Dietetic Association’s Food and Culinary Professionals dietetic practice groups, Janet is actively involved in the Virginia Dietetic Association and the Northern District Virginia Dietetic Association.  She is also a member of the American Dietetic Association, the National Restaurant Association, the International Council on Hotel, Restaurant, and Institutional Education, (CHRIE), and the Restaurant Association of Metropolitan Washington.   

Personal interests include scuba diving, wine tasting and exploring the cuisine and cultures of different countries.
