HEALTH 110 - Concepts of Personal and Community Health

Course Objective

Upon the completion of this course, the student should be able to demonstrate a knowledge base which will allow analytical thinking about health and health problems.

Blended Learning Activity

Topic: Making sense of food labels.
Purpose: Understand the elements of a food label and to incorporate this knowledge into making healthy food choices.

Homework Preparation for Online Class

Read MERLOT repository and complete 'Understanding the Nutrition Facts Label' interactive learning activity.

Ask students to go to their kitchen and find what they believe to be the healthiest food choice and the “junkiest” food choice. This item will need to be labeled with a FDA Nutrition Facts Food label for this exercise.

Online Class

Enter information to the ONLINE FORUM about the food products that they have chosen. Be sure to include:

  • Name of Item
  • Serving Size
  • Calories Per Serving
  • Total Grams of Fat
  • Mg of Cholesterol
  • Mg of Sodium
  • Grams of Dietary Fiber
  • Grams of Sugar
  • Grams of Protein
  • # of Strange Ingredients Listed*

*Number of items listed in ingredients that do not appear to be food (examples: diglycerides, TBHQ, propylene glycol monostearate, stearoyl lactylic acid).

Homework Preparation for Online Class

Read chapter 6 on 'Personal Nutrition', before attending next classroom session and to bring their two food labels to class.

In-Person Class

  • Lecture with PowerPoint on recommended daily allowances of items found on food labels.
  • Have students get into groups of four or five to compare their food labels and choose the healthiest and the "junkiest" label within their group. Have one student from each group share the healthiest and why it was chosen. Have another student share the "junkiest" and why it was chosen.
  • Lecture on health problems that arise due to excessive or inadequate intakes of each item listed on the labels.
  • Final competition for healthiest and "junkiest". Based on what they now know, have the entire class vote on the healthiest and "junkiest" food label of all those previously presented by groups. Award each of the two students who win a banana. (To make the point that many of our healthiest food choices, like fresh fruits and vegetables, are not sold with labels attached.)

Homework Before Online Class

Ask students to go to www.mypyramidtracker.gov to enter and analyze their eating habits for three days and write a one-page response on their results.
